Position Description:
North Dakota State University invites applications for a Meat Science Research Technician/Assistant Meat Lab Manager. This is a 12-month position in the department of Animal Sciences, an academic unit of the College of Agriculture, Food Systems, and Natural Resources. The Department of Animal Sciences is seeking a quality individual to join the Animal Sciences department whose expertise and discipline interest areas encompass genetics, livestock management, meat science, nutrition, physiology, and reproduction.

Research Technician responsibilities:
1) Support scientific research and assist with research activities in meat and animal sciences
2) Supervise and assist with training of undergraduate and graduate students
3) Travel on and off campus for research activities
4) Collect carcass data for livestock species

Assistant Meat Lab Manager responsibilities:
1) Assist with management and operations of the Meat Lab providing services for faculty, graduate assistants, and undergraduate students through teaching, research and extension activities and the general public through meat sales
2) Supervise and train undergraduate and graduate students including teaching assistance
3) Perform slaughter and processing of meat products
4) Assure safe food production by following USDA rules and regulations and the NDSU HACCP plan
5) Coordinate meat science outreach programs including BBQ Boot Camp

Minimum Qualifications:
1) Bachelor's degree in Animal, Meat or Food Science or high school diploma with equivalent experience (5 years)
2) Knowledge of meat animal anatomy, animal handling, slaughter, meat cutting, and meat processing techniques
3) Commitment to excellence in assisting with meat science teaching, research, and extension
4) Commitment to safe food production including product handling and sanitation activities
5) Excellent written, oral, and interpersonal communication skills and the ability to work in a diverse team atmosphere
6) Able to occasionally lift up to 100 pounds, and routinely lift 50 pounds
7) Valid driver's license or the ability to obtain one

Preferred Qualifications:
1) Experience in meat animal anatomy, animal handling, slaughter, meat cutting, and meat processing techniques
2) Research experience in animal and meat science
3) Teaching experience in animal and meat science
4) HACCP certification
5) Supervisory experience
