GENERAL SUMMARY:

The Dietary Services Manager is directly accountable to the Executive Director for the daily operation of the Dietary Services department, with regularly scheduled consultation from a qualified dietitian. Performs other duties as assigned by supervisor.
ESSENTIAL FUNCTIONS:
  • Enforces dietary policies and procedures with the assistance of Consultant Dietitian.
  • Represents dietary department at staff meetings and communicates pertinent administration information to staff.
  • Ensures compliance with both State and Federal standards of participation for long-term care facilities.
  • Adapts master menu cycle to individual and facility preferences with Consultant Dietitian.
  • Purchase or requisitions food supplies in appropriate quantities based on the menu.
  • Supervises proper receiving and storage of food.
  • Maintains and issues a file of standardized recipes adjusted to proper yield.
  • Supervises food preparation and service; ensures high level of food quality and compliance with food service regulations.
  • Ensures high sanitation standards. Maintain current cleaning schedules.
  • Ensures proper equipment maintenance in cooperation with Executive Director and Maintenance Department.
  • Controls dietary cost within budget, including food/supplements, labor, supplies and equipment.
  • Prepare meals and/or perform functions of Cooks and Dietary Aides in instances of unscheduled absences and to ensure meal service quality and procedural accuracy. May be scheduled to routinely perform Cook or Dietary Aide functions in smaller facilities.
  • Maintains current dietary care plans for residents. Participates in Care Conference with other Department Heads. Provides approaches to identified nutritional problems.
  • Participates with Executive Director in dietary staff selection, supervision and termination.
  • Schedules dietary department employees for work and to attend required orientation and training programs.
  • Planning and conducting ongoing in-service training.
  • Visits residents to obtain food preferences and assists in gathering information for nutritional assessment.
  • Communicates appropriate information to other members of the health team.
  • Follows up and implements recommendations from the Consultant Dietitian, in consultation with the Executive Director.
  • May give diet instructions under direction of Consultant Dietitian.
  • Maintains essential records:
    • Menus (per state regulation)
    • Purchase records (6 months)
    • Nutritional Assessment, Minimum Data Sets and Care Plans
    • Diet Roster and Nourishment List
    • Dietary Department schedule
KNOWLEDGE, SKILLS & ABILITIES:
  • High school graduate or equivalent.
  • Successful completion of a course in food service supervision which meets the standards established by the Dietary Managers Association, or a graduate of another course in food service supervision with 90 or more hours in classroom instruction with on-the-job consulting by a dietitian.
  • Must be able to travel and/or attend educational offerings presented by the company, as well as approved offerings by Association conferences or other entities.
  • Ability to read and write in English, with a knowledge of arithmetic and units of measurement used in food preparation.
  • Moderate to heavy lifting (50 pound maximum), bending, reaching, and stooping.
  • Ability to use good judgment, make decisions and direct the work of others.
