  1. Starter Culture & Phage Laboratory Maintenance, Testing, and Analysis
  • Independently and accurately perform laboratory testing as defined in Standard Operating Procedures (SOPs) for the Phage and Starter Culture laboratories.
  • Tests to include, but not limited to: pH, titratable acidity, bacteriological analysis testing, water activity, spot-testing, plaque assays, activity testing, EPS determination, urease screening, API testing.
  • Maintains an accurate and detailed laboratory notebook of all testing methods, analyses, observations, and results. Tracking and trending of data may be expected.
  • Enters and self-reviews all test results into the appropriate databases.
  • Calibrates, maintains, and operates laboratory equipment, such as microscopes, automated titration equipment, laboratory hoods and balances, pH meters, thermometers, incubators, ultra-low temperature freezers (ULTs), freeze-drying equipment, centrifuges, automated chemical analyzers, spectrophotometers, automated gas chromatography equipment, and others.
  • Assist in the maintenance of seedstock inventories or culture collections. Includes organizing supplies, sample preparation, production and maintenance of culture stocks, entry of production data and lab analysis results in applicable database, basic inventory management and shelf-life.
  • Troubleshoot equipment and testing procedures using available resources.
  • Adhere to aseptic technique and good housekeeping practices of laboratory workspaces.
  • Assist in the maintenance of lab supply inventories; submit supply orders as needed.

  1. Food Safety/Starter Culture Laboratory QA/QC Support
  • Follows all regulatory, safety, standard operating procedures, good manufacturing practices (GMPs) and good laboratory practices (GLPs).
  • Comply with all quality and regulatory programs.
  • Be an active contributor in all required documentation to ensure compliance for FDA CFR 11 regulations in starter culture research and production activities.
  • Retrieve, review, and maintain required food safety documentation in the appropriate databases.
  • Perform required bacteriological analysis of starter culture products to monitor quality and shelf-life of starter cultures and associated products.
  • Be an active participant in SOP reviews and maintenance.
  • Participation in both internal and external audits of the laboratory, laboratory procedures and safety procedures.

  • Maintains confidentiality within all aspects of work.
  • May be required to participate in professional laboratory or scientific organizations.
  • May be requested to participate on R&D project teams by contributing to the depth and quality of scientific experiments.
  • May assist with troubleshooting starter culture issues.
