Description

The Senior Manager - Operations / Catering Sales opening is located at the Minnesota Landscape Arboretum in Chaska, MN.

This position is responsible for planning and managing food service within the retail and catering units of this venue. In conjunction with direct reports, develop strategic operations plans aligned with the client's mission, vision, and objectives to include sustainable practices while balancing the fiscal constraints of the operation.

This role will also foster relationships with the University client and is responsible for building sales - maintaining existing catering accounts and soliciting new business - for the Arboretum community.

Additional Responsibilities:
  • Qualifies sales opportunities through inquiries and prospecting to maximize revenue potential.
  • Inputs data to generate proposals, contracts, BEO's, update client files and enter information into Cater Trax.
  • Follow-ups with all clients through phone calls, letters, emails and site tours in order to secure contracts, ensure customer satisfaction and build new business.
  • Develop and be accountable for a safety culture that creates a work environment where no one gets hurt.
  • Ensure quality, consistency, and adherence to standards based on Aramark Higher Education Operation Excellence.
  • Establish and maintain food production systems (PRIMA) and procedures for the ordering, receiving, storing, preparing, and serving of food related products in partnership with executive chef.
  • Responsible for menu planning and development in partnership with executive chef.
  • Ensure that requirements for appropriate sanitation and food safety levels in respective areas are met.
  • Develop operational component forecasts; monitor expenses and reports all variances.
  • Responsible for component's budgeting and accounting functions.
  • Ensure period inventory is conducted through direct reports.
  • Coordinate and supervise unit personnel regarding production, merchandising, quality and cost control, and labor management.
  • Provide Student, Client, Employee, and Community Advocacy.
  • Drive customer service and employee engagement through effective use of customer and employee engagement surveys.
  • Maintain records to comply with Aramark, government, and accrediting agency standards.
  • Interact with Client Management and maintains effective client and customer relations at all levels within the client organization.


Qualifications

  • Ideal candidates will possess a Bachelor's degree with a minimum of 5 years multi-unit experience in dining, retail and/or catering operations.
  • A minimum of 2 years primary financial accountability with a direct reporting relationship to clients is required
  • Previous experience with controlling food and labor costs, menu pricing and development of a team.
  • Previous experience in catering sales required.
  • Proven track record of developing and implementing tools to increase top and bottom line as well as strong communication skills.
