Description

The purpose of this position is to prepare all food production in Catering and Culinary Support. The position follows the direction of the lead cook in preparing food to be served to customers. The positions main purpose is prep work, batch cooking and display cooking. The position also assists in daily safety and sanitation practices and routine cleaning.

Duties & Responsibilities

  • Follow the FoodPro Menu Management System’s standardized menus and recipes in the production of food, E-Commerce ordering system
  • Gather all products necessary for production and organize work area, pulling product from freezer, coolers, storerooms
  • Cook in producing food for Catered Events, Breakfast, Lunch, Dinner, Receptions, Weddings, banquets style, plated service, Grab n Go Service, Take out Service
  • Follow progressive cooking techniques to keep food products at optimum quality and keep waste at a minimum
  • Use the following food service equipment: electric slicer, 60 quart steam jacket kettles, combo oven, grills, large and small mixers, food processor, food choppers, scales, deep-fat fryers, thermometers, warmers, steam tables and the many small pieces of equipment used in the business
  • Prepare special diets as assigned
  • Prepare catered events as requested-Prepares cold foods according to the computer generated recipes for Dining Residence Centers and the Catering and Retail Production Departments. IE: vegetable salads, fruit salads, gelatin and prepared salads, fruit and vegetable trays, cheese, meat and cracker trays, relish trays, wide variety of dessert production, dressings, condiments, sauces and beverage production.
  • Work with the preparation and disposal of fish, poultry, beef, lamb, pork and other meat products
  • Will produce hot and cold Hors d’oeuvres and be creative with garnishes
  • Use thermometers in the process of achieving the proper temperatures for the various products, record temperatures, and check on products being held to insure safe temperatures, record temperatures for the coolers and freezer and advise supervisor if temperature requirements are not met
  • Use the proper procedures to clean and to sanitize the various work areas and the large and small equipment used in production
  • Keep self-clean, use proper hand washing techniques, wear clean uniform and hair and beard restraint, avoid direct contact with food if at all possible and use gloves and utensils when possible
  • Adheres to all safety and sanitation policies which includes removal of all jewelry and piercings (plain wedding band is permissible) and wearing hair and beard restraints
  • Use the proper procedures in the storage of food, cover, date and label food, chill food rapidly using an approved method
  • Use the proper sanitation/production procedures in the production of products in order to avoid contamination (cross contamination with cutting boards, knives, etc.), minimize the duration products are in the danger temperature zone, reduce direct contact with hand, minimize reheating products to one time using an approved method and not to combine older product into fresh
  • Stay current on sanitation techniques and processing affecting the work

Required Competencies

  • Ability to stand on feet 3-4 hours and move 45-50 lbs. as necessary
  • Ability to read and comprehend reports and basic math skills to complete reports

Minimum Requirements

  • High School Diploma or Equivalent
  • Food production experience in a large volume setting
  • Experience with catered events
  • Successful completion of Criminal History Background Check

In compliance with federal law, all persons hired will be required to verify identity and eligibility to work in the US and to complete the required employment eligibility verification form upon hire. 

Preferred Qualifications

  • NRA Serv Safe Certification
  • Two-year experience in large-volume food production and experience with catered events
  • One-year experience in short order grill production
  • One-year experience of display cooking/production

Minimum Hiring Salary/Position Classification

$14.00/hour increase to $14.70/hour after successful six month review, Full-time, Benefited, Non-exempt

Work Schedule/Start Date

Monday - Friday 6:00am - 2:30pm with some weekends and variable schedule depending on scheduled events

Benefits
