Position Summary

The Sushi Chef is responsible for managing the daily operations of the Sushi area, implementing production process, managing food cost/labor cost and have overall understanding of HACCP. They motivate employees to continually improve performance, follow/direct HACCP/Food Safety/Physical Safety Programs, and manage cost controls.

Job Duties and Responsibilities

Plans and creates menus and corresponding menu prices
Develops and tests recipes and techniques for food preparation and presentation to ensure consistent high quality and to minimize food costs
Conducts regular physical inventories of food supplies, and assess projected needs; orders all necessary food and supplies
Hires, trains, and mentors staff to ensure continuous growth through training, developing, direction, assessing performance, and providing feedback
Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation, and accident prevention principles

Position Requirements

High School Diploma or GED
Culinary Arts Degree or equivalent experience
Excellent Customer Service skills
2 to 3 years of Sushi preparation experience
CPR/AED certification within first 30 days of hire
Ability to frequently lift and/or move up to 10 pounds and occasionally lift and/or move up to 50 pounds.
Ability to work with knives and other kitchen tools
