Job Description
The primary purpose of your job position is to plan, organize, develop and direct the overall operation of the Dietary Department in accordance with current federal, state, and local standards, guidelines and regulations governing our facility, to assure that quality nutritional services are provided on a daily basis and that the Dietary Department is maintained in a clean, safe, and sanitary manner.
The person selected for this position must have strong personal skills and the passion to work with elderly residents.

Candidate must possess strong leadership, communication and organizational skills. Knowledge of food service, dietary management, quality food production and nutrition is a necessity. Graduate of an approved Dietary Manager's course and culinary experience preferred but not required.

  • Adhere to St. Francis Health Services' Mission and Core Values while performing company business.
  • Coordinate dietary services and activities with other related departments (i.e. Nursing, Environmental Services, Activity and Social Services, etc.).
  • Responsible for overall purchasing, production, equipment and service of food in a timely manner.
  • Monitor food preparation to ensure quality food production.
  • Develop menu with the assistance of the Consultant Dietitian.
  • Monitor entire therapeutic nutrition system to ensure optimum nutrition is obtained for all residents.
  • Interview newly admitted residents. Assess resident's needs and preferences and develop initial nutritional care plan and review accordingly. Consult with Dietician according to resident need. Document assessments, care plans and progress notes.
  • Process diet changes and new diets as received from nursing services to ensure the physician's plan of care is being carried through.
  • Recruit, interview, and select personnel for the department.
  • Determine departmental staffing requirements, schedule department work hours (including vacation and holiday schedules), personnel and work assignments.
  • Counsel/discipline personnel and terminate personnel when necessary.
  • Keep abreast of current federal and state regulations, as well as professional standards of practice, and make recommendations on changes in policies and procedures to the Administrator.
  • Review and assist in developing a plan of correction for dietary service deficiencies noted during survey inspections.
  • Participate in the annual operating budget for department, including estimating needs of supplies, staffing levels, capital & minor equipment purchases and ongoing maintenance of equipment.
  • Must have a basic understanding of food service experience, dietary management, quality food production and therapeutic nutrition.
